Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/3 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1/2 cup chicken broth
  • 1 tbsp cornstarch (optional, for thickening)
  • Green onions and sesame seeds (for garnish)

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until golden and fully cooked, about 5-7 minutes. Remove and set aside.
  3. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and chicken broth.
  4. Pour the sauce into the skillet and bring to a simmer.
  5. Optional: Mix cornstarch with a little water and add to the skillet for a thicker sauce.
  6. Return the cooked chicken to the skillet, stirring to coat it evenly with the sauce.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • For extra spice, add red chili flakes or a dash of sriracha to the sauce.
  • Serve over steamed rice or noodles for a complete meal.
  • Can substitute almond butter for peanut butter for a nutty twist.
