Ingredients
- 2 cups all-purpose flour
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup coconut milk
- 1 tsp vanilla extract
- 1 cup desiccated coconut
- Optional: 1/2 cup of mix-ins (like chopped nuts, dried fruit, or chocolate chips)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment paper.
- Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add Eggs: Beat in the eggs, one at a time, mixing well after each addition.
- Mix in Coconut: Stir in the desiccated coconut.
- Alternate Wet and Dry Ingredients: Gradually mix in the dry ingredients and coconut milk, starting and ending with the dry ingredients. Make sure to mix just until combined.
- Pour and Bake: Pour the batter into the prepared loaf pan. If using mix-ins, fold them into the batter before transferring. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Remove the bread from the oven and allow it to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
