These Copycat Texas Roadhouse Rattlesnake Bites are a spicy, cheesy delight that make the perfect appetizer. Filled with jalapeños and cheese, then breaded and fried to golden perfection, these bites offer a delicious kick. Easy to make and perfect for parties, they’ll be a hit with everyone.


Ingredients

  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4-5 jalapeños, seeded and finely diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  • In a large bowl, combine Monterey Jack cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
  • Using your hands, form the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  • Freeze the cheese balls for at least 30 minutes to firm up.
  • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Roll each cheese ball in flour, then dip in beaten eggs, and coat with breadcrumbs. Repeat the process for extra crispiness.
  • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the breaded cheese balls in batches until golden brown and crispy, about 2-3 minutes.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve warm with ranch dressing or your favorite dipping sauce.

Notes

  • For extra heat, leave some seeds in the jalapeños or add a dash of cayenne pepper to the cheese mixture.
  • These bites can be made ahead and frozen. Just fry them directly from the freezer.
