This Crockpot Chicken Parmesan Soup recipe is an easy, flavorful, and comforting dish that combines tender chicken, Parmesan cheese, and Italian herbs for a hearty meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 (15 oz) can crushed tomatoes
  • 1 cup marinara sauce
  • 1 cup diced onions
  • 2 garlic cloves, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 1 cup uncooked pasta (small shapes like ditalini or elbow)
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil, for garnish


Instructions

  • Add chicken breasts, chicken broth, crushed tomatoes, marinara sauce, onions, garlic, basil, oregano, red pepper flakes, salt, and pepper into the crockpot.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  • Remove the chicken, shred it, and return it to the crockpot.
  • Stir in the uncooked pasta and cook for an additional 20-25 minutes until pasta is tender.
  • Mix in the Parmesan cheese and heavy cream, stirring until combined.
  • Serve hot, garnished with fresh basil and additional Parmesan if desired.
