Ingredients
- 4 cups potatoes, cubed
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese

- 1/4 cup sour cream
- 2 tbsp butter, melted
- 1 tbsp olive oil
- 1 tbsp ranch seasoning mix
- Salt and pepper to taste

Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss cubed potatoes with olive oil, ranch seasoning mix, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet and bake for 25-30 minutes, until tender and golden brown.
- In a large mixing bowl, combine baked potatoes, melted butter, ranch dressing, and sour cream. Mix well.
- Transfer the mixture to a greased 9x13 inch baking dish.
- Top with shredded cheddar and mozzarella cheeses and crumbled bacon.
- Bake for an additional 10-15 minutes, until cheese is melted and bubbly.
- Garnish with chopped fresh chives before serving, if desired.
