Description

Ingredients

  • 4 cups potatoes, cubed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup ranch dressing
  • 1/4 cup sour cream
  • 2 tbsp butter, melted
  • 1 tbsp olive oil
  • 1 tbsp ranch seasoning mix
  • Salt and pepper to taste
  • 2 tbsp chopped fresh chives (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss cubed potatoes with olive oil, ranch seasoning mix, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet and bake for 25-30 minutes, until tender and golden brown.
  4. In a large mixing bowl, combine baked potatoes, melted butter, ranch dressing, and sour cream. Mix well.
  5. Transfer the mixture to a greased 9x13 inch baking dish.
  6. Top with shredded cheddar and mozzarella cheeses and crumbled bacon.
  7. Bake for an additional 10-15 minutes, until cheese is melted and bubbly.
