Ingredients
- 8 ounces elbow macaroni or small pasta
- 6 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon paprika
- 1/2 cup diced celery
- 1/4 cup chopped red onion
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
- Paprika and chopped parsley for garnish
Instructions
- Cook pasta according to package directions; drain and rinse under cold water.
- In a large bowl, combine mayonnaise, mustard, apple cider vinegar, sugar, and paprika.
- Add cooked pasta, chopped eggs, celery, red onion, and pickle relish to the bowl.
- Stir until well combined and season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
- Garnish with paprika and chopped parsley before serving.
