Ingredients

  • 8 ounces elbow macaroni or small pasta
  • 6 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika
  • 1/2 cup diced celery
  • 1/4 cup chopped red onion
  • 1/4 cup sweet pickle relish
  • Salt and pepper to taste
  • Paprika and chopped parsley for garnish

Instructions

  • Cook pasta according to package directions; drain and rinse under cold water.
  • In a large bowl, combine mayonnaise, mustard, apple cider vinegar, sugar, and paprika.
  • Add cooked pasta, chopped eggs, celery, red onion, and pickle relish to the bowl.
  • Stir until well combined and season with salt and pepper to taste.
  • Chill in the refrigerator for at least 1 hour before serving.
  • Garnish with paprika and chopped parsley before serving.

Notes
