Description
Indulge in the ultimate comfort of a easy 3 ingredient potato soup recipe, made effortlessly with just three ingredients. Perfect for those chilly evenings when you want something warm, hearty, and quick.
Ingredients
- 6 large russet potatoes, peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 5 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Optional toppings: chopped green onions, grated cheddar cheese, crumbled bacon
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another 1-2 minutes, or until fragrant.
- Add the diced potatoes to the pot and stir to combine.
- Pour in the chicken or vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low and let simmer until the potatoes are tender, about 20 minutes.
- Use an immersion blender to puree the soup to your desired consistency. Alternatively, you can leave some potato chunks for texture.
- Stir in the heavy cream and season with salt and pepper. Heat for an additional 2-3 minutes until warm.
- Serve hot, garnished with optional toppings if desired.
Notes
To make this soup vegetarian, use vegetable broth. For a lighter version, substitute heavy cream with milk or half-and-half.
