- 1 pound beef sirloin or tenderloin, thinly sliced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 cup sour cream
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- Salt and pepper, to taste
- 12 ounces egg noodles, cooked
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef slices until browned on both sides. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant. Add mushrooms and cook until softened.
- Sprinkle flour over the vegetables and stir well. Cook for 1-2 minutes.
- Gradually add beef broth, stirring until the sauce thickens.
- Reduce heat to low. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Simmer gently for 5 minutes.
- Return the beef to the skillet and cook for 2-3 minutes, or until heated through. Season with salt and pepper.
- Serve the stroganoff over cooked egg noodles and garnish with chopped parsley.
Notes
- For a lighter option, substitute Greek yogurt for sour cream.
- Use tender cuts like sirloin or tenderloin to ensure the beef stays juicy.
- Serve with rice or mashed potatoes as an alternative to egg noodles.
