Description
This Garlic Mushroom Pasta recipe is loaded with sautéed mushrooms, a creamy garlic sauce, and pasta. A quick and easy vegetarian meal!
Ingredients
- 12 oz spaghetti or fettuccine
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 4 garlic cloves, minced
- 2 cups cremini or button mushrooms, sliced
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/4 cup pasta water (reserved)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water, drain, and set aside.
- Heat olive oil and butter in a large skillet over medium heat. Add mushrooms and cook for 5-6 minutes until golden and tender.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in heavy cream and parmesan cheese. Cook for 2-3 minutes until the sauce thickens slightly.
- Add Italian seasoning, salt, and pepper to taste.
- Toss the cooked pasta into the skillet and mix to coat. Use reserved pasta water to adjust the sauce consistency if needed.
- Garnish with fresh parsley and serve immediately.
Notes
- Use a mix of wild mushrooms for more flavor variety.
- Swap heavy cream with half-and-half for a lighter sauce.
- Add a pinch of red pepper flakes for a spicy kick.
