Description

This Garlic Mushroom Pasta recipe is loaded with sautéed mushrooms, a creamy garlic sauce, and pasta. A quick and easy vegetarian meal!


Ingredients

  • 12 oz spaghetti or fettuccine
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 2 cups cremini or button mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 cup pasta water (reserved)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water, drain, and set aside.
  • Heat olive oil and butter in a large skillet over medium heat. Add mushrooms and cook for 5-6 minutes until golden and tender.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in heavy cream and parmesan cheese. Cook for 2-3 minutes until the sauce thickens slightly.
  • Add Italian seasoning, salt, and pepper to taste.
  • Toss the cooked pasta into the skillet and mix to coat. Use reserved pasta water to adjust the sauce consistency if needed.
  • Garnish with fresh parsley and serve immediately.

  • Use a mix of wild mushrooms for more flavor variety.
  • Swap heavy cream with half-and-half for a lighter sauce.
  • Add a pinch of red pepper flakes for a spicy kick.
