Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and paprika.
- Spread potatoes evenly on a baking sheet.
- Place chicken breasts on the sheet and drizzle with olive oil. Season with salt, pepper, and Italian seasoning.
- Bake for 25 minutes. Remove from oven, sprinkle Parmesan cheese over chicken and potatoes.
- Return to oven and bake for an additional 10-15 minutes or until chicken is cooked through and potatoes are crispy.
- Garnish with fresh parsley and serve warm.
