Description

This Irish bacon, cabbage, and potato soup is a comforting classic, perfect for chilly days. Made with tender potatoes, savory bacon, and fresh cabbage, this flavorful soup is easy to prepare and deeply satisfying. Ideal for St. Patrick’s Day or any cozy meal!

Ingredients

  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 2 cups green cabbage, shredded
  • 1 cup milk or heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme
  • 1 tablespoon butter (optional)

Instructions

  • In a large pot, cook bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, sauté onion and garlic in the bacon drippings until softened.
  • Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  • Stir in cabbage, salt, pepper, and thyme. Cook for another 10 minutes until cabbage is soft.
  • Blend a portion of the soup for a creamy texture (optional).
  • Stir in milk or cream and butter for added richness.
  • Return bacon to the pot, stir, and serve warm.

Notes

  • For a smokier flavor, use smoked bacon or ham.
  • Adjust thickness by adding more broth or blending more potatoes.
  • Serve with crusty bread for a complete meal.
