Ingredients

For the Crust:

  • 1 cup flour
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped pecans (optional)

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped cream or whipped topping

For the Lemon Layer:

  • 2 packages (3.4 oz each) lemon instant pudding mix
  • 3 cups cold milk

For the Top Layer:

  • 2 cups whipped cream or whipped topping
  • Lemon zest or lemon slices for garnish

Instructions

  1. Prepare the Crust: In a mixing bowl, combine the flour, melted butter, and chopped pecans. Press the mixture into the bottom of a 9x13-inch baking dish. Bake at 350°F (175°C) for 15 minutes or until lightly golden. Allow to cool completely.
  2. Cream Cheese Layer: In a separate mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy. Fold in the whipped cream. Spread this mixture over the cooled crust.
  3. Lemon Layer: In another bowl, whisk together the lemon pudding mix and cold milk for about 5 minutes or until the pudding starts to thicken. Spread the lemon pudding over the cream cheese layer.
  4. Top Layer: Spread the remaining whipped cream over the lemon pudding layer. Garnish with lemon zest or lemon slices.
  5. Refrigerate the lemon lasagna for at least 4 hours or overnight for the best results.

Notes

You can also sprinkle some crushed graham crackers or cookie crumbs on top for extra texture.
