Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded provolone cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 cup butter, melted
  • 1/4 cup ranch dressing
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix olive oil, lemon juice, garlic powder, onion powder, salt, and pepper. Marinate the chicken breasts in the mixture for at least 30 minutes.
  • Grill or sear the marinated chicken breasts in a skillet over medium heat for 4-5 minutes per side until lightly browned. Transfer the chicken to a baking dish.
  • In a small bowl, combine the melted butter, panko breadcrumbs, 1/2 cup shredded Parmesan, and provolone cheese. Stir until well mixed.
  • Spread a layer of ranch dressing over each chicken breast, then sprinkle the breadcrumb-cheese mixture on top.
  • Bake the chicken in the preheated oven for 15-20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F) and the topping is golden and crispy.
  • In the final few minutes of baking, sprinkle the grated Parmesan over the chicken and broil on high for 1-2 minutes until golden brown.
  • Serve hot with your favorite sides and garnish with fresh parsley, if desired.

Notes

  • You can substitute mozzarella for provolone if preferred.
  • For a spicier version, add red pepper flakes to the breadcrumb mixture.
  • Serve with mashed potatoes or steamed vegetables for a complete meal.
