Description

Ingredients

  • 3 medium cucumbers, peeled and thinly sliced
  • 3 medium tomatoes, cut into wedges
  • 1 medium onion, thinly sliced
  • 1/4 cup vinegar (white or apple cider)
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 1-2 tablespoons sugar (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh herbs (such as dill, parsley, or basil), chopped

Instructions

  1. In a large bowl, combine the sliced cucumbers, tomato wedges, and sliced onions.
  2. In a separate small bowl, whisk together the vinegar, water, olive oil, sugar, salt, and black pepper. Taste and adjust the sweetness and seasoning as needed.
  3. Pour the marinade over the vegetables and toss gently to coat.
