Ingredients

  1. 4 boneless, skinless chicken breasts
  2. Salt and pepper, to taste
  3. 2 tbsp olive oil
  4. 3-4 cloves garlic, minced
  5. 1 tsp red pepper flakes (adjust to taste)
  6. 1 cup cherry tomatoes, halved
  7. 1/2 cup sundried tomatoes, chopped
  8. 1 cup chicken broth
  9. 2/3 cup heavy cream
  10. 1/2 cup grated Parmesan cheese
  11. 1/4 cup fresh basil, chopped
  12. Fresh parsley, for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides (about 4-5 minutes per side). Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and red pepper flakes. Sauté for a minute until fragrant.
  4. Stir in the cherry and sundried tomatoes. Sauté for another 1-2 minutes.
  5. Pour in the chicken broth, and let it simmer for about 5 minutes to reduce slightly.
  6. Reduce the heat to low, then add the heavy cream, Parmesan cheese, and basil. Stir until well combined.
  7. Return the chicken to the skillet and let it simmer in the sauce for another 5-7 minutes or until the chicken is cooked through and the sauce is slightly thickened.
  8. Garnish with additional basil and parsley, if desired.
