Description
This easy Mini Buffalo Chicken Egg Rolls recipe combines spicy buffalo chicken with crispy egg roll wrappers for a delicious appetizer. Perfect for parties or game day snacks!
Ingredients
- 2 cups cooked, shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese, softened
- 1/4 cup chopped green onions
- 20 mini egg roll wrappers
- Vegetable oil, for frying
- Ranch or blue cheese dressing, for dipping
Instructions
- In a large bowl, mix together shredded chicken, buffalo sauce, shredded cheddar cheese, cream cheese, and chopped green onions.
- Lay an egg roll wrapper on a clean surface. Place about 1 tablespoon of the chicken mixture in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up tightly. Use a dab of water to seal the edges. Repeat with remaining wrappers and filling.
- Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
- Fry the egg rolls in batches for 2-3 minutes, or until golden brown and crispy. Remove and drain on paper towels.
- Serve hot with ranch or blue cheese dressing for dipping.
Notes
- You can bake the egg rolls at 400°F (200°C) for 15-20 minutes for a healthier option.
- Adjust the amount of buffalo sauce to taste preference.
