Ingredients

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large skillet, heat olive oil over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another minute.
  • Stir in the rice, chicken broth, and milk. Bring to a simmer and then reduce heat to low. Cover and cook for 15 minutes.
  • Add the broccoli florets to the skillet, stir to combine, and cover. Cook for an additional 5-7 minutes, until the broccoli is tender and the rice is fully cooked.
  • Return the chicken to the skillet and stir in the shredded cheddar cheese until melted and well combined.
  • Garnish with fresh parsley before serving.
