Description
This one-pot beef stroganoff is a quick and easy meal with tender beef, mushrooms, and a creamy sauce. Perfect comfort food ready in under 30 minutes, ideal for busy weeknights.
Ingredients
- 1 pound beef sirloin or flank steak, thinly sliced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons all-purpose flour
- 4 cups beef broth
- 1 cup sour cream
- 2 tablespoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 8 ounces egg noodles
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions
- Sear the beef: In a large pot, heat olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove beef and set aside.
- Sauté the onions and garlic: In the same pot, add chopped onion and garlic. Cook until the onion is soft and translucent.
- Cook the mushrooms: Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown.
- Thicken the sauce: Sprinkle the flour over the vegetables and stir well. Gradually add the beef broth while stirring to avoid lumps. Bring to a simmer.
- Combine and simmer: Return the beef to the pot. Add the sour cream, Worcestershire sauce, Dijon mustard, and egg noodles. Stir well to combine. Season with salt and pepper.
- Cook the noodles: Cover and let simmer for 10-12 minutes, or until the noodles are cooked and the sauce is thickened.
- Serve: Garnish with chopped parsley and serve hot.
Notes
- For a richer flavor, use cremini mushrooms instead of button mushrooms.
- Adjust the thickness of the sauce by adding more or less beef broth as needed.
