This one-pot beef stroganoff is a quick and easy meal with tender beef, mushrooms, and a creamy sauce. Perfect comfort food ready in under 30 minutes, ideal for busy weeknights.


Ingredients

  • 1 pound beef sirloin or flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 8 ounces egg noodles
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  • Sear the beef: In a large pot, heat olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove beef and set aside.
  • Sauté the onions and garlic: In the same pot, add chopped onion and garlic. Cook until the onion is soft and translucent.
  • Cook the mushrooms: Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown.
  • Thicken the sauce: Sprinkle the flour over the vegetables and stir well. Gradually add the beef broth while stirring to avoid lumps. Bring to a simmer.
  • Combine and simmer: Return the beef to the pot. Add the sour cream, Worcestershire sauce, Dijon mustard, and egg noodles. Stir well to combine. Season with salt and pepper.
  • Cook the noodles: Cover and let simmer for 10-12 minutes, or until the noodles are cooked and the sauce is thickened.
  • Serve: Garnish with chopped parsley and serve hot.

Notes

  • For a richer flavor, use cremini mushrooms instead of button mushrooms.
  • Adjust the thickness of the sauce by adding more or less beef broth as needed.
