Description

Ingredients

  1. 1 cup pastina (tiny star-shaped pasta or any other tiny pasta shape)
  2. 2 boneless, skinless chicken breasts, diced
  3. 1 cup sliced mushrooms (white or cremini work well)
  4. 2 cloves garlic, minced
  5. 1 small onion, finely diced
  6. 1 cup heavy cream or half-and-half
  7. 1/4 cup grated Parmesan cheese
  8. 2 tablespoons olive oil or butter
  9. Salt and pepper to taste
  10. Fresh parsley, chopped (for garnish)
  11. 2 cups chicken broth or water

Instructions

  1. In a large skillet or pan, heat olive oil or butter over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until lightly browned and no longer pink inside.
  3. Add the onion, garlic, and mushrooms to the pan. Sauté until the onions are translucent and mushrooms are browned.
