Description
The Rachel Sandwich is a lighter twist on the classic Reuben. Made with turkey, Swiss cheese, creamy coleslaw, and tangy Russian dressing on rye bread, this sandwich is grilled to perfection for a crispy, gooey delight.
Ingredients
- 4 slices rye bread
- 2 tbsp unsalted butter, softened
- 4 slices deli turkey
- 2 slices Swiss cheese
- 1 cup coleslaw
- 2 tbsp Russian dressing (or Thousand Island dressing)
Instructions
- Spread Russian dressing on one side of each bread slice.
- Layer 2 slices of bread with turkey, Swiss cheese, and coleslaw.
- Top with the remaining bread slices, dressing side down.
- Butter the outer sides of each sandwich.
- Heat a skillet over medium heat and grill the sandwiches for 3-4 minutes per side, until the bread is golden brown and the cheese is melted.
- Remove from the skillet, slice in half, and serve warm.

- For a spicier kick, add a dash of hot sauce to the Russian dressing.
- Swap Swiss cheese with Havarti for a creamier texture.
