Description

The Rachel Sandwich is a lighter twist on the classic Reuben. Made with turkey, Swiss cheese, creamy coleslaw, and tangy Russian dressing on rye bread, this sandwich is grilled to perfection for a crispy, gooey delight.


Ingredients

  • 4 slices rye bread
  • 2 tbsp unsalted butter, softened
  • 4 slices deli turkey
  • 2 slices Swiss cheese
  • 1 cup coleslaw
  • 2 tbsp Russian dressing (or Thousand Island dressing)

Instructions

  • Spread Russian dressing on one side of each bread slice.
  • Layer 2 slices of bread with turkey, Swiss cheese, and coleslaw.
  • Top with the remaining bread slices, dressing side down.
  • Butter the outer sides of each sandwich.
  • Heat a skillet over medium heat and grill the sandwiches for 3-4 minutes per side, until the bread is golden brown and the cheese is melted.
  • Remove from the skillet, slice in half, and serve warm.
