Description

Ingredients

  1. 2 boneless, skinless chicken breasts
  2. 1 cup breadcrumbs or Italian seasoned breadcrumbs
  3. 1/2 cup all-purpose flour
  4. 2 large eggs, beaten
  5. 4 slices prosciutto
  6. 4 slices Provolone or mozzarella cheese
  7. 1/4 cup white wine
  8. 2 tbsp lemon juice
  9. 4 tbsp unsalted butter
  10. 2 tbsp olive oil
  11. Salt and pepper, to taste
  12. Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness using a meat mallet.
  3. Season the chicken breasts with salt and pepper.
  4. Dredge each chicken breast in flour, then dip into the beaten eggs, and coat with breadcrumbs.
  5. In a large skillet over medium heat, add olive oil. Once hot, add the breaded chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side.
  6. Transfer the chicken to a baking dish.
  7. Place a slice of prosciutto on each chicken breast, followed by a slice of cheese.
  8. In the same skillet, add butter and allow it to melt. Stir in the white wine and lemon juice. Cook for 2-3 minutes until slightly reduced.
  9. Pour the sauce over the chicken breasts in the baking dish.
  10. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
  11. Garnish with chopped parsley.
