Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs or Italian seasoned breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 4 slices prosciutto
- 4 slices Provolone or mozzarella cheese
- 1/4 cup white wine
- 2 tbsp lemon juice
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness using a meat mallet.
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, then dip into the beaten eggs, and coat with breadcrumbs.
- In a large skillet over medium heat, add olive oil. Once hot, add the breaded chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side.
- Transfer the chicken to a baking dish.
- Place a slice of prosciutto on each chicken breast, followed by a slice of cheese.
- In the same skillet, add butter and allow it to melt. Stir in the white wine and lemon juice. Cook for 2-3 minutes until slightly reduced.
- Pour the sauce over the chicken breasts in the baking dish.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped parsley.
