Description

Embrace the comfort of the South with this mouth-watering Redneck Lasagna recipe. Layers of barbecue pulled pork and creamy mac and cheese combine to create a dish that's uniquely Southern and undeniably delicious.


Ingredients

  1. 12 lasagna noodles, cooked according to package instructions
  2. 2 cups pulled pork (store-bought or homemade)
  3. 1 cup barbecue sauce
  4. 4 cups prepared macaroni and cheese (homemade or boxed)
  5. 2 cups shredded cheddar cheese
  6. 2 green onions, chopped (for garnish)
  7. Crispy fried onions (optional for topping)
  8. Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the pulled pork with the barbecue sauce.
  3. Spread a thin layer of the barbecue pulled pork at the bottom of a baking dish.
  4. Place 4 lasagna noodles over the pork.
  5. Spread half of the macaroni and cheese over the noodles.
  6. Sprinkle a third of the shredded cheddar cheese over the mac and cheese.
  7. Add another layer of 4 lasagna noodles.
  8. Spread the remaining barbecue pulled pork over the noodles.
  9. Add another layer of 4 lasagna noodles.
  10. Spread the remaining macaroni and cheese over the noodles and top with the remaining cheddar cheese.
  11. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  12. Remove from the oven and let cool slightly. Garnish with chopped green onions and optional crispy fried onions before serving.

  • Feel free to adjust the amounts of pulled pork, barbecue sauce, or macaroni and cheese to your preference.
