- 1/2 cup cooked and diced chicken or shrimp (optional)
- 2 tablespoons soy sauce
- 1/2 teaspoon ground white pepper
- 4 eggs
- 2 tablespoons vegetable oil for frying
Instructions
- If making homemade egg foo young patties: In a large bowl, mix together onion, bean sprouts, chicken or shrimp (if using), soy sauce, white pepper, and eggs until well combined.
- Heat vegetable oil in a skillet over medium heat. Pour 1/4 of the egg mixture into the skillet to form a patty. Cook until golden brown, then flip and cook the other side. Repeat for the remaining patties.
- Toast the white bread slices.
- Spread mayonnaise on one side of each toasted bread slice.
- Place an egg foo young patty on four of the slices.
- Top with lettuce, tomato slices, and dill pickle slices.
- Place the remaining bread slices on top, mayonnaise side down.
- Cut the sandwich in half and serve immediately.
