Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced

- 1 cup celery, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 1 package (9 oz) cheese tortellini (fresh or frozen)
- 2 cups fresh spinach or kale, chopped
- Optional: Grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Drain excess grease if necessary.
- Add diced onion, garlic, carrots, and celery to the pot. Sauté until vegetables are softened, about 5 minutes.
- Stir in diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add tortellini to the soup and cook according to package instructions, about 5-7 minutes, until tender.
- Stir in fresh spinach or kale and cook for an additional 2 minutes until wilted.
- Taste and adjust seasoning if needed. Serve hot, garnished with grated Parmesan cheese if desired.
