Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 1 package (9 oz) cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach or kale, chopped
  • Optional: Grated Parmesan cheese for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Drain excess grease if necessary.
  • Add diced onion, garlic, carrots, and celery to the pot. Sauté until vegetables are softened, about 5 minutes.
  • Stir in diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add tortellini to the soup and cook according to package instructions, about 5-7 minutes, until tender.
  • Stir in fresh spinach or kale and cook for an additional 2 minutes until wilted.
  • Taste and adjust seasoning if needed. Serve hot, garnished with grated Parmesan cheese if desired.
