Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 1/2 cup grated Asiago cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  • Season chicken breasts with salt and pepper.
  • Heat olive oil and butter in a large skillet over medium heat. Add chicken breasts and cook for 5-6 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add garlic and sliced mushrooms. Sauté for 3-4 minutes until mushrooms are tender.
  • Stir in chicken broth, heavy cream, and thyme, scraping up any browned bits from the skillet. Let the sauce simmer for 5 minutes.
  • Add grated Asiago cheese to the sauce and stir until melted and smooth.
  • Return the chicken breasts to the skillet, spooning sauce over the chicken.
  • Cook for an additional 2-3 minutes to heat through. Garnish with fresh parsley and serve.

Notes

For a lower-fat version, substitute half-and-half for heavy cream. This dish pairs well with roasted vegetables, mashed potatoes, or pasta.
