Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- 1/2 cup grated Asiago cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil and butter in a large skillet over medium heat. Add chicken breasts and cook for 5-6 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and sliced mushrooms. Sauté for 3-4 minutes until mushrooms are tender.
- Stir in chicken broth, heavy cream, and thyme, scraping up any browned bits from the skillet. Let the sauce simmer for 5 minutes.
- Add grated Asiago cheese to the sauce and stir until melted and smooth.
- Return the chicken breasts to the skillet, spooning sauce over the chicken.
- Cook for an additional 2-3 minutes to heat through. Garnish with fresh parsley and serve.
Notes
For a lower-fat version, substitute half-and-half for heavy cream. This dish pairs well with roasted vegetables, mashed potatoes, or pasta.
