This slow cooker chicken and rice recipe is a delicious and easy one-pot meal! Made with tender chicken, flavorful rice, and simple pantry ingredients, it’s perfect for busy weeknights or meal prepping.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 cup cream of chicken soup
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 cup frozen mixed vegetables (optional)
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley
- 1/2 cup shredded cheddar cheese (optional for topping)
Instructions
- Place the chicken breasts in the slow cooker.
- In a bowl, mix chicken broth, cream of chicken soup, onion, garlic, paprika, salt, and pepper. Pour over the chicken.
- Add uncooked rice and frozen vegetables (if using). Stir gently to combine.
- Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is tender and rice is cooked.
- Remove chicken, shred or chop, then return to the slow cooker. Stir to combine with rice.
- Top with shredded cheddar cheese (optional), cover until melted. Serve warm and enjoy!
Notes
- For extra flavor, use bone-in chicken thighs instead of chicken breasts.
- To prevent overcooking, check rice doneness around the 4-hour mark when cooking on LOW.
- Serve with a side salad or steamed vegetables for a complete meal.
