Description

This slow cooker chicken and rice recipe is a delicious and easy one-pot meal! Made with tender chicken, flavorful rice, and simple pantry ingredients, it’s perfect for busy weeknights or meal prepping.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup frozen mixed vegetables (optional)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1/2 cup shredded cheddar cheese (optional for topping)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix chicken broth, cream of chicken soup, onion, garlic, paprika, salt, and pepper. Pour over the chicken.
  3. Add uncooked rice and frozen vegetables (if using). Stir gently to combine.
  4. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is tender and rice is cooked.
  5. Remove chicken, shred or chop, then return to the slow cooker. Stir to combine with rice.
  6. Top with shredded cheddar cheese (optional), cover until melted. Serve warm and enjoy!
