This easy Slow Cooker Chicken Stroganoff recipe delivers tender chicken in a creamy, flavorful sauce with mushrooms and onions. Perfect for a hands-off, comforting dinner that everyone will love!
Ingredients
- 2 lbs boneless, skinless chicken breasts, cubed
- 1 cup chicken broth
- 1 cup sour cream
- 1 can (10.5 oz) cream of mushroom soup
- 8 oz mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp cornstarch (optional)
- 2 tbsp water (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear cubed chicken for 2-3 minutes on each side until golden brown.
- Place seared chicken in the slow cooker.
- In the same skillet, add mushrooms, onion, and garlic. Cook for 3-4 minutes until the vegetables are softened.
- Add chicken broth to the skillet, scraping up any browned bits from the bottom. Pour the mixture over the chicken in the slow cooker.
- Add cream of mushroom soup, paprika, salt, and pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 4-5 hours, or until the chicken is tender.
- In the last 30 minutes of cooking, stir in sour cream.
- If a thicker sauce is desired, mix cornstarch and water in a small bowl and stir into the slow cooker.
- Garnish with fresh parsley before serving.
Notes
- Serve over egg noodles, rice, or mashed potatoes.
- For a lighter version, use Greek yogurt instead of sour cream.
