Smashed Broccoli with Parmesan and Garlic-Infused Oil is a flavorful, easy-to-make side dish that elevates simple ingredients to a gourmet level.
Ingredients
2 heads of broccoli, cut into florets
3 tablespoons olive oil
3 cloves garlic, minced
½ cup grated Parmesan cheese
Salt and pepper, to taste
Instructions
Preheat oven to 425°F (220°C).
Blanch the broccoli florets in boiling water for 2 minutes, then immediately plunge into ice water to stop the cooking process. Drain well.
On a baking sheet, toss the blanched broccoli with olive oil, minced garlic, salt, and pepper.
Roast in the preheated oven for 20-25 minutes, until the edges are crispy and browned.
Remove from the oven and lightly smash the broccoli florets with a fork or potato masher.
Sprinkle with grated Parmesan cheese and return to the oven for an additional 5 minutes, until the cheese is melted and golden.
Serve immediately.
Notes
For extra flavor, add a sprinkle of red pepper flakes before roasting.
Substitute olive oil with garlic-infused olive oil for a stronger garlic flavor.
