Ingredients

  • 1 kg ground beef
  • 1/2 kg ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup BBQ sauce (plus extra for glazing)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat your smoker to 225°F (110°C).
  2. In a large bowl, combine the milk and breadcrumbs. Allow it to soak for 5 minutes.
  3. Add in the ground beef, ground pork, beaten eggs, onion, garlic, BBQ sauce, smoked paprika, salt, pepper, and thyme. Mix until well combined but avoid overmixing.
  4. Shape the mixture into a loaf form and place it on a tray or directly on the smoker grates.
  5. Smoke the meatloaf for about 3 hours or until it reaches an internal temperature of 160°F (70°C).
  6. During the last 30 minutes of smoking, glaze the meatloaf with additional BBQ sauce.
  7. Once cooked, remove from the smoker, let it rest for 10 minutes, then slice and serve.

Notes

  • Woods like hickory or oak work best for this recipe.
  • The meatloaf can also be wrapped in bacon for additional flavor.
