Ingredients
- 1 kg ground beef
- 1/2 kg ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs, beaten
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1/4 cup BBQ sauce (plus extra for glazing)
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Preheat your smoker to 225°F (110°C).
- In a large bowl, combine the milk and breadcrumbs. Allow it to soak for 5 minutes.
- Add in the ground beef, ground pork, beaten eggs, onion, garlic, BBQ sauce, smoked paprika, salt, pepper, and thyme. Mix until well combined but avoid overmixing.
- Shape the mixture into a loaf form and place it on a tray or directly on the smoker grates.
- Smoke the meatloaf for about 3 hours or until it reaches an internal temperature of 160°F (70°C).
- During the last 30 minutes of smoking, glaze the meatloaf with additional BBQ sauce.
- Once cooked, remove from the smoker, let it rest for 10 minutes, then slice and serve.
Notes
- Woods like hickory or oak work best for this recipe.
- The meatloaf can also be wrapped in bacon for additional flavor.
