This easy S’mores Ice Cream Sandwich recipe combines the classic flavors of chocolate, marshmallows, and graham crackers with creamy ice cream. Perfect for a refreshing summer treat!
Ingredients
- 8 graham crackers, broken in half
- 1 cup chocolate chips, melted
- 1 cup mini marshmallows
- 1 pint vanilla ice cream, slightly softened
Instructions
- Line a baking sheet with parchment paper.
- Dip one side of each graham cracker half in melted chocolate and place on the baking sheet.
- Sprinkle mini marshmallows over the chocolate-covered side of half the graham crackers.
- Place the baking sheet in the freezer for 10 minutes to set.
- Scoop ice cream onto the plain graham cracker halves.
- Top with the marshmallow-topped graham crackers to form sandwiches.
- Freeze the sandwiches for at least 30 minutes before serving.
