Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar, divided
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 1/2 cups boiling water

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  • In a bowl, mix flour, 3/4 cup sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until a smooth batter forms. Pour into the prepared baking dish.
  • Combine remaining sugar and cinnamon. Sprinkle evenly over the batter.
  • Pour boiling water carefully over the entire mixture without stirring.
  • Bake for 40–45 minutes until the top is golden and set, with a gooey sauce at the bottom.
  • Serve warm with ice cream or whipped cream if desired.

Notes

  • Let the cobbler sit for a few minutes after baking; it will thicken slightly.
  • For an extra cinnamon kick, add a pinch of cinnamon to the batter as well.
