Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/2 cups granulated sugar, divided
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/3 cup melted butter
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 1/2 cups boiling water
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
- In a bowl, mix flour, 3/4 cup sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until a smooth batter forms. Pour into the prepared baking dish.
- Combine remaining sugar and cinnamon. Sprinkle evenly over the batter.
- Pour boiling water carefully over the entire mixture without stirring.
- Bake for 40–45 minutes until the top is golden and set, with a gooey sauce at the bottom.
- Serve warm with ice cream or whipped cream if desired.
Notes
- Let the cobbler sit for a few minutes after baking; it will thicken slightly.
- For an extra cinnamon kick, add a pinch of cinnamon to the batter as well.
