Ingredients
- 4 cups mashed sweet potatoes (about 4 large sweet potatoes)
- 1/2 cup granulated sugar
- 2 large eggs, beaten
- 1/3 cup unsalted butter, melted
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp salt
Topping:
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1/3 cup unsalted butter, melted
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine mashed sweet potatoes, granulated sugar, beaten eggs, melted butter, milk, vanilla extract, and salt. Mix until smooth.
- Spread the sweet potato mixture evenly in the prepared baking dish.
- In a separate bowl, mix together brown sugar, flour, melted butter, and chopped pecans until crumbly.
- Sprinkle the pecan topping evenly over the sweet potato mixture.
- Bake for 30-35 minutes until the topping is golden brown and the casserole is heated through.
- Let cool slightly before serving.
Notes
- For a smoother texture, you can use a hand mixer to blend the sweet potato mixture.
