Ingredients
- 500g chicken pieces (preferably bone-in)
- 2 large onions, finely chopped
- 3-4 cloves garlic, minced
- 1-inch ginger, minced
- 3-4 green chilies, slit
- 2 tomatoes, pureed
- 1/4 cup plain yogurt, whisked
- 3 tbsp lemon juice
- 1/4 cup fresh cilantro (coriander) leaves, chopped
- 3 tbsp oil or ghee
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp garam masala
- Salt to taste
Instructions
- In a bowl, marinate the chicken pieces with lemon juice, red chili powder, and salt. Let it sit for at least 30 minutes.
- Heat oil or ghee on a tawa (or large skillet) over medium heat. Add the cumin seeds and let them sizzle.
- Add the finely chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic and ginger. Fry for another 2 minutes until aromatic.
- Incorporate the tomato puree and slit green chilies. Cook until the oil begins to separate from the masala.
- Add the turmeric powder, whisked yogurt, and the marinated chicken pieces. Mix well to coat the chicken with the masala.
- Cook the chicken on medium heat, stirring occasionally, until fully cooked and tender.
- Once the chicken is cooked through and has absorbed the flavors of the masala, sprinkle garam masala on top.
- Garnish with freshly chopped cilantro (coriander) leaves.
- Serve hot with naan, paratha, or rice.
