Description

Ingredients

  1. 500g chicken pieces (preferably bone-in)
  2. 2 large onions, finely chopped
  3. 3-4 cloves garlic, minced
  4. 1-inch ginger, minced
  5. 3-4 green chilies, slit
  6. 2 tomatoes, pureed
  7. 1/4 cup plain yogurt, whisked
  8. 3 tbsp lemon juice
  9. 1/4 cup fresh cilantro (coriander) leaves, chopped
  10. 3 tbsp oil or ghee
  11. 1 tsp red chili powder
  12. 1/2 tsp turmeric powder
  13. 1 tsp cumin seeds
  14. 1 tsp garam masala
  15. Salt to taste

Instructions

  1. In a bowl, marinate the chicken pieces with lemon juice, red chili powder, and salt. Let it sit for at least 30 minutes.
  2. Heat oil or ghee on a tawa (or large skillet) over medium heat. Add the cumin seeds and let them sizzle.
  3. Add the finely chopped onions and sauté until they turn golden brown.
  4. Stir in the minced garlic and ginger. Fry for another 2 minutes until aromatic.
  5. Incorporate the tomato puree and slit green chilies. Cook until the oil begins to separate from the masala.
  6. Add the turmeric powder, whisked yogurt, and the marinated chicken pieces. Mix well to coat the chicken with the masala.
  7. Cook the chicken on medium heat, stirring occasionally, until fully cooked and tender.
  8. Once the chicken is cooked through and has absorbed the flavors of the masala, sprinkle garam masala on top.
  9. Garnish with freshly chopped cilantro (coriander) leaves.
  10. Serve hot with naan, paratha, or rice.
